Are you looking to eat more local food? Wanting to learn how to preserve the bounty of your own garden produce as well as the abundance of the farmer's market produce as the summer wanes? Interested in learning and awakening the knowledge of our ancestors in regards to ancient ways of preservation? Looking to hone your skills in the realm of scratch baking and deepen your connection to your food by learning some traditional foodway skills? If so, this is the class for you!
In this class, we will explore the time honored ways of preserving the harvest, earlier methods such as fermentation and later methods such as canning (both water bath and pressure), we will touch upon drying, pickling, bread baking, whole grains, cheesemaking, kombucha, various fermented herbal ales, as well as explore the vital role of scratch baking as it nourishes and feeds yourself and your family. This class is about celebrating the role the food maker and creator has in the family and learning new ways to create vibrant, healthy, whole foods while extending the harvest well into the winter season and beyond. All materials, handouts and delicious tastings included!
